Ingredients-
For salad dressing-
2 tablespoon apple cider vinegar
2 tablespoon extra virgin olive oil
2 tablespoon water
2 teaspoon sugar/honey
1 teaspoon dried herb (Oregon)
Chopped coriander
Pinch of salt
Crushed black pepper

For chicken patties-
500 grams minced chicken ( keema)
1 onion finely chopped
2 tablespoon ginger garlic paste
2 tablespoon lemon juice
1 teaspoon cumin powder
1/2 teaspoon turmeric powder
Chopped coriander leaves
1/2 teaspoon chili flakes (optional )
1 finely chopped green chili
Salt per taste
Baking vegetables and quinoa-
1 cup cooked quinoa
Chopped cabbage
Chopped beans
Sliced mushrooms
Sliced carrot
Chopped bell pepper
Sliced onion
Extra virgin olive oil
Salt
Pepper
Herbs
How to prepare-
1.Take 500 grams of minced chicken (keema), add 2 tablespoon of lemon juice, 1 chopped onion, 2 tablespoon ginger garlic , 1 teaspoon cumin powder, 1/2 teaspoon turmeric powder, finely chopped green chili , 1/2 teaspoon chili flakes, chopped coriander leaves and salt as per taste.
2. Mix all the ingredients and marinate the chicken for 20-30 minutes.
3. For salad dressing take 2 tablespoon of apple cider vinegar, 2 tablespoon of extra virgin olive oil, 2 tablespoon of water, 2 teaspoon sugar or honey, 1 teaspoon herbs (Oregon), chopped coriander, crushed pepper, and pinch of salt.
4. Mix all the ingredients nicely and keep it aside.
5. Preheat the oven at 200 degrees centigrade for 5 minutes now add all the vegetables ( cabbage, carrot, mushrooms, beans, bell pepper, onion) on to the Baking tray.
6. Add 2 teaspoon of olive oil, pinch of salt pepper and herbs. 7. Bake the vegetables at 200 degrees centigrade for 15 minutes. 8. Heat the pan brush some oil, make small patties with the marinated chicken. 9. Cook both the sides until golden brown.
10. Now in big bowl transfer the baked vegetables, add 1 cup cooked quinoa. 11. Now add half of the salad dressing and mix it well.
